How do you like your eggs? – KERRIE FITNESS π³π³π³
(I know what you’re thinking, but no!!)
Whether you enjoy them for breaky, lunch, dinner or just a snack… eggs are always an awesome choice. With all that good training you do, they’re eggs-actly what you need to keep your muscles strong!! πͺπ» π π
Eggs are a great source of inexpensive, high quality protein. More than half the protein of an egg is found in the egg white along with vitamin B2 and lower amounts of fat and cholesterol than the yolk. The whites are rich sources of selenium, vitamin D, B6, B12 and minerals such as zinc, iron and copper.
Not to mention they’re just so yummy π
The many ways I love to enjoy eggs π³π³π³…
Scrambled
Base Ingredients:
– 2-3 eggs
– Splash of Tabasco sauce
– Splash of water
– Ground pepper
Method:
Whisk all the ingredients with a fork in a jug. Pour into a heated non stick pan on medium, then turn down to low and continuously stir with a non stick egg-flipping spatular. Add any of the following combinations and continuously stir until you reach the right consistency.
- Smoked salmon, spinach, marinated capsicum, asparagus and laughing cow cheese
- Smoked salmon, avocado, asparagus, laughing cow cheese and anchovy stuffed olives
- Turkey, spinach, avocado, laughing cow cheese and caviar
- Salmon, avocado, spinach, cottage cheese and Carolina Reaper sauce (go to home page and search “Carolina Reaper” for recipe
Always a fam fave, so many yummy choices π
Tip: break the end of your asparagus off the stems and discard. Wash the asparagus, then break into half, place in a mug and pour over boiling water from the jug. By the time you finish preparing everything else they’ll be ready to eat. I’m all about super quick and easy. Doesn’t get any easier or quicker than this!!
With a twist.. pop into half a capsicum π
Omelette
Base Ingredients:
– 2-3 eggs
– Splash of Tabasco sauce
– Splash of water
– Ground pepper
Method:
Whisk all the ingredients with a fork in a jug. Pour into a heated non stick pan on medium, layer your ingredients to one side, then turn down to low heat and cover with aluminium foil. When it appears to be almost cooked, flip the empty side with a non stick egg-flipping spatula, again cover with foil for a little. Check cooked and serve!
Fried
I simply heat a non stick pan (no oils or sprays), crack the egg in, turn down the heat to low and cover with foil. Keep checking to see when it’s cooked the way you like it, either runny or hard. Runny is definitely the best! I’m sure there could be a debate about that!
- Smoked salmon, avocado, asparagus and feta cheese
- In a steak sandwich with wholemeal toast (fillet steak marinated in oyster sauce and grilled 6 minutes each side; sweet chilli sause, cottage cheese, cucumber, avocado and mushrooms peeled, chopped and fried in a non stick pan, no oils or sprays
- A little snack plate with turkey, laughing cow cheese, avocado, asparagus, spinach and Brazil nuts
- In a chicken snitzel burger, wholemeal muffin, sweet chilli sauce, cottage cheese, beetroot, pineapple, tomato and spinach
- Stacked under smoked salmon, laughing cow cheese, marinated capsicum, avocado and a side of asparagus
- On laughing cow cheese, smoked salmon and avocado
